Ingredients
4 slices bacon, chopped
2 Tbsp butter
¼ cup chopped onion
1 clove garlic, minced
1 10-oz package frozen chopped spinach, thawed and well-drained
2 oz cream cheese, softened
1 cup whipping cream
⅛ tsp black pepper
Carrot sticks, celery sticks, and/or bell pepper strips, for serving
How to Make It
- In a large skillet, cook bacon over medium heat until crisp. Remove the bacon with a slotted spoon and set aside.
- Add butter, onion, and garlic to bacon drippings in the skillet; cook until onion is tender. Stir in spinach; cook 3 to 4 minutes or until heated through. Add cream cheese; cook and stir until cheese is melted and smooth. Stir in whipping cream and pepper; cook 3 to 5 minutes or until mixture thickens. Top with bacon.
